As I started visiting small farms in West Virginia to market local food to consumers, I learned a lot I didn’t know.  And it got me very alarmed.

My blogs started taking on a urgent tone…you MUST change your ways….until a woman I barely knew and subsequently became a best friend, cautioned me that no one listens to yelling.

So, I think I will let photos tell the story and just give you something to think about each one.

Did you know that the US government permits chickens to be sent to China where labor costs are so much lower? The chickens will be processed and then shipped back, the better for you to continue enjoying chicken at a low price.567372-usda-allows-chicken-processing-in-china

Did you know that a number of food items prepared in China, from dog treats to baby food, have been recalled because of toxic and unhealthy items?  Unless you know your farmer, you will not know where the meat was processed.

Starting in 1994 some crops were genetically modified. Within ten years it has been estimated that over 75% of the average American diet was obtained from genetically enhanced foods….plants and animals that would not occur naturally and are only designed to help with weeds and pests or other environmental annoyances to the producer.  While the jury is still out about the genetic changes in our food affecting the eater, it is already clear that the manufacturers have not obtained one of their goals: to reduce the use of chemical sprays. So, anyone eating GMO food is getting a huge dose of chemicals that are being determined, because of consumer pressure, to be carcinogenic. gmo-awareness-blog-masthead-4

In the past five years there have been efforts made in a number of states to require foods that use genetically modified ingredients to be labeled. The companies that make the chemicals, control the seeds for planting, and the organizations that manufacture and sell the food involved have poured in billions of dollars and persuaded people who are not taking time to read independently that there is no ill effect. However, in each fight the margin is getting closer and closer so now these organizations are fighting in Congress to prohibit labeling. They think the typical American is too stupid to understand and if they see an issue they will not buy the products.

Most meat that is sold in supermarkets are from animals that have spent at least a few months in what is called a animal confinement facility.  Efforts by activists have raised awareness that the automatic use of antibiotics to increase the growth rate and keep the animals from getting sick in the dirty and congested facilities have resulted in antibiotic resistance strains of bacteria that mean people who get sick may not be able to be helped. Some places have eliminated its use and are advertising “antibiotic free.” pig factory farmKS cattle feedlot

It has become illegal to obtain and show these photos, as the organizations behind it realize you might get concerned and stop buying their products. Stopping the photos does not mean the practice has stopped.

So, now what?  Well, take a few minutes and think about your own body or your kids.  Does anyone have pretty constant tummy problems?  How about immune system problems, like allergies, eczema,  arthritis, and there even has been some discussion about chemicals in conventional food related to higher rates of ADHD.  If anyone eating out of your kitchen or eating out regularly has any of these symptoms, you may want to switch a pattern of spending.farmacy

You might want to try what we did……we did a 6-month trial. We did not buy organic as our first choice, but from local farmers we got to know and understood they used no sprays and other organic practices to raise their food. We supplemented with organic products only if we could not obtain what we needed. My husband was skeptical but after 6 months my arthritis was more easily managed and my daughter’s gut issues which had bothered her since her teen years improved dramatically.

Local Harvest  is a national organization that provides information near your zip code for farms. No excuse you don’t “know your farmer.”localharvest_logo

We also discovered one more benefit….our food tasted better than what we could buy in the supermarket.  If only for THAT reason, if you ENJOY eating, you might want to run a test.

Those of us over 50 recognize how much the US has changed since our childhood. While some long for the good old days of the 1950s, they don’t recognize it is not because of what was or was not happening all those decades ago but because we were children. We had no real knowledge of what was really going on and we basically had no responsibilities.  Of course life was simpler then-we were children and naive.

This ad is an example of how it was in the 1950s and it’s an ad for coffee, not an R rated film.

There has been no idyllic time. Ever. For each era  where countless people had prosperity, countless others were diminished through economic or legal policies.

Some people recognized that something needed to be done to fix those policies, so all people could have the opportunity to strive to that level of prosperity held by others.  What happened over time was that some people just could not be helped and other people began to realize their own position of power was diluted and started working for equal protection under the law.not being bullied

The turmoil we now experience is truly nothing new. Even the hate, which seems to be pervasive, is really nothing new. There is a lot of fear and we are being manipulated by those in power to keep us off balance and fearful. Fear of anyone different from us, whether in color, nationality, citizenship, education, economic standing, residence style, education. Having fear of anyone who is different, people huddle in groups of like-minded friends. They rarely bother to know anyone outside their narrow group, and so the fear…and the hate….continue.

Serendipity

Not once did I consider it an April Fools joke but we have no idea how the photo showed up on Graham’s Facebook feed last night.  Kentucky State University has a mobile fruit and vegetable processing truck that visits farms in season to help them preserve their harvest.KSU mobile fruit and vegetable kitchen

Finding no info to take me specifically to the person in charge, I emailed the head of the agricultural school at KSU, dropping The Wild Ramp market experience to give me local “street” cred (more like farm cred).  And now we are setting up an appointment for me to go look-see!

Why the excitement? Two factors. In case you missed it, I am setting up a business here in Oregon to help small farmers preserve their surplus fruits and vegetables. AND we will be in Kentucky for Graham to do some forensic business in May, less than an hour from where the KSU research farm is located in Frankfurt!!Can-Do Company Logo Final

WOW! Life is good!  Now, who can I get to help me write a grant application?

Want Ice Cream on that NEW Apple Pie?

Back in the late 70s, my ex was living with a guy who had purchased some interesting hot dog buns…..they were U-shaped and would not break apart, like most buns can when you put the weiner inside, so they had a certain market appeal. Well, the roommate left them on the counter and there they sat, week…after week…..after week. It became an interesting thing to check to see if any mold was growing…..and the answer was no.

That was the beginning of my awakening of looking at food labels. But at that time, I was still trusting the FDA to be sure the food we were able to purchase was safe. Now I know better.

appleThe news hit that the FDA has now approved genetically modified apples. These GMO “Arctic Apples” will be red delicious and granny smiths, the two varieties most fed to children. Oh great, let’s introduce into our children’s bodies something that is untested.

What will this new process do? Apples will not turn brown when cut.  According to information shared by the Organic Consumer Association: “While most existing genetically engineered plants are designed to make new proteins, the Arctic Apple is engineered to produce a form of genetic information called double-stranded RNA (dsRNA). The new dsRNA alters the way genes are expressed. The result, in the Arctic Apple’s case, is a new double strand of RNA that genetically “silences” the apple’s ability to produce polyphenol oxidase, an enzyme that causes the apple to turn brown when it’s exposed to oxygen.”GMO_DNA_1bna_naba_ribbon

The FDA sees no reason to be sure it is safe.  Other scientific organizations disagree.  I don’t know about you, but knowing the manipulation is inside the genes changing things around and some scientists believe it IS getting into eaters’ bodies is enough for me. I will be asking my apple farmers if they are using this technology….and I will not eat this. Instead, I will continue to use the old fashioned way to keep apples from turning brown. Again, if Granny did not eat it, you should not. 24 Hours Later

The question is not whether we will be extremists, but what kind of extremists will we be. Will we be extremists for hate or for love? Will we be extremists for the preservation of injustice or for the extension of justice?—MLK Jr. Letter from Birmingham City Jail (1963)

Wanting Something Better

The alarm goes off way too early, but you force yourself up. You’re warm and dry, but you grump no one has handed you a cup of coffee in bed.  You stumble into the kitchen where your brew is ready, waiting for you. You then settle down with your favorite tool to read your email, your newspaper, watch the morning show.

You fuss with the kids, the spouse, maybe the parentals. Put the dog out, give the cat fresh water. You shower, shave (perhaps, it is no shave November), dress and head out to the car. Drive yourself to work, by yourself, complaining about the traffic but ain’t no way you would take a bus. rat-race-cage

You put in your eight hours. The boss is a pain in the butt.  He asked you to get some information for him. The work assignment means having to actually talk to other people to get the information. You send an email instead.  You didn’t bring lunch so you go grab some fast food. In about a half hour your gut is bothering you; you never make the connection.  You check your email to see if the person ever got back to you and since they didn’t, you check your personal email as well. An hour later you notice the work email had dropped in one minute after you got sidetracked. You write a 100-word memo to your boss and check the time again and see you only have 10 minutes to kill. You chat with a co-worker and decide her idea for supper sounds good. same old shit

You head home, sitting in traffic for 40 minutes and get so annoyed you decide not to stop at the grocery store. Everyone is fussing at home. You order a pizza. Everyone stuffs their face in ten minutes. No conversation. The television is on. You hear more about what happened in Ferguson overnight.I want more

Your reaction?

You righteously decide those people are making bad choices.  Everyone in the household agrees but you still yell and get agitated. It’s time for bed but you are pretty steamed so it takes several hours to relax. The alarm goes off way too early….

Things can be different but YOU have to make it so.earth has music

Eat At Your Own Risk

In a world where few people seem to take personal responsibility, in a world where it appears our government is no longer working in our best interest, in a world where conflict seems to be increasing, we have to change our ways. Each one of us.

The food found in American supermarkets has been full of chemicals for years.  Auto-immune diseases have been increasing. Correlation? You betcha.

So increasingly, shoppers have turned to organic foods but not only is it generally more costly, the group that defines what is organic and what is not has been diluting the value of that label.  So it is no longer the safety zone we first depended on.

Agent Orange being sprayed over VietNam

Agent Orange being sprayed over VietNam

Today the news came out that despite Congressional voting and despite a majority of the people in the country arguing against the use of 2,4-D for use as an herbicide, it was approved for use and GMO crops will be resistant.  Why fight against it? Well, 2, 4-D is one of the main ingredients in Agent Orange, the chemical that was used extensively to defoliate VietNam during the war.  It has caused cancers and other illnesses and deformities in the Vietnamese population for several generations. And now, in order to deal with weeds that have adjusted to the prior chemicals, this will be sprayed on  OUR food.Vietname defoliated

Food you will eat. And so, 2, 4-D will move inside your body.  With unknown results….but we only need to look at VietNam to see what it can do.

Generations after the war, birth defects are still happening.

Generations after the war, birth defects are still happening in VietNam.

The other recent news is not new but has been shared for several years. The increasing use of antibiotics in the normal feed of most meat animals means our own bodies are getting low doses when we eat supermarket meat.   Remember the little sticker on your pill bottle of antibiotics? It reminds you to take your entire dose. That is because if the bacteria is not killed, it will only weaken and then it adapts. That end result is that the antibiotic is no longer effective against that bacteria. We are quickly moving out of the magic age of antibiotics and back to a time when an infection can kill you.Antibiotic resistance_0The government asked the meat industry to voluntarily reduce the use of antibiotics. Yeah, right. When animals are crowded together in the ways they are in those factories, disease spreads so they feed antibiotics all the time, whether the animals are sick or not.

And you eat that meat. And so, small amounts of antibiotics move inside your body.

FOR YOUR OWN HEALTH IT IS TIME TO MAKE A CHANGE!!

I have often written KNOW YOUR FARMER! What does that really mean? You get to know a farmer in your area who produces food in a way that will not expose you to these chemicals.  You do that because it is better to spend a bit more on healthy food now than to pay for medicine and health care later.know farmer

If you do not know how to find a farmer go to http://www.localharvest.org/ and put in your zip code. No excuses.  There are options to the supermarket near you!!! Value your health.  If not, you eat at your own risk.

Silly Me Smart Me

I did something silly at my age. I took a part time temp job, helping at a farm. The farmer looked at me and asked me if I knew it was hard work. Oh, yes, I assured her, thinking of all the farmers I had met in West Virginia and now here in Oregon. Intellectually I know it is hard work.  She then asked me why I thought I could do it. Well, thinking of several people, I know there are some people my age and older farming. And thinking of a few others, I know there are people my weight farming. I assured her if I did not injure myself, I would be there each and every day until the rains came and her need for an extra pair of hands ended.

The first day we picked beans. The farmer and the other helper kneeled or leaned over, bending at the waist. I knew my arthritic knees and my lower back would never forgive me, so I semi-squatted and soon discovered my quads and my hamstrings were a bit angry at my decision. It definitely was mind over matter to walk anywhere for the next couple of days.  Ibuprofen helped. So did lots of MSM and glucosamine and heat and ice.  And being stubborn.2014-09-17 08.52.38

I2014-10-05 08.03.22 talked to Beth Ann Earl of Noni’s farm in Huntington, West Virginia who told me to sit down and scoot along. Compensate for my age and body. Stretch.  I have two pairs of jeans that may not be wearable out in public after this job, but I can pick beans with the best of them now. LOL  The last of the beans which have been drying on the bush need to be harvested and laid out inside the high tunnel, joining other beans, some popcorn, and the onions.

2014-08-31 13.23.10The farm is organic, which means no herbicide. That also means an amazing crop of pigweed.  Not wanted, but it turns out I’m a pretty darn good weeder. Dubious honor as the garden is 200 feet long and a kazzilion rows wide. I also scooted along much of this process too, carrying the weeds to the ends to load on to the 4-wheel to bring to the compost pile. Fun driving the Kubota!. 2014-08-29 12.20.13I’m pretty proud how wonderful that garden looks now.2014-10-05 11.51.14

I started working a couple of months ago and it was pretty warm.  Recently we had 2 days of light rain, just enough to split the tomatoes. The forecast looks like this may be the last summer weather, as the rain is showing daily for the following week.

At that point we’ll shell the beans inside and then she’ll probably let me go. I will be looking for a desk job next. 2014-10-05 09.56.31

Don’t get me wrong. This was a great experience. After visiting farms in West Virginia and really getting to know many of the farmers supplying The Wild Ramp Market, I had a great respect for the work they do. Now, understanding how it really truly feels, my admiration has soared.

We consumers take the food that appears in the store for granted. We have abundant supply of an amazing selection of food. If you buy from the supermarket, items come from all over the world. If you value the effort and want to support the local economy, you purchase from local farmers and you follow a more seasonal approach in your diet. Either way or a combination, realize this:

Our small farmers are finding it harder and harder to make a living. Industrial farming does not look like the story book version of a farm. Industrial farming typically grows one kind of crop, year in and year out, feeding the soil with chemicals to try to restore the nutrients. Small farms may be conventional, using chemicals, but many make an effort to farm in the time honored way, whether certified or not, organically with a variety of crops and rotation of the land with cover crops helping restore the nutrients to the soil for the next edible crop.2014-09-17 08.52.45

You can tell the way I lean. I love my local farmers. I was happy with all we could find to eat in West Virginia and feel abundantly blessed here in Oregon’s Willamette Valley.  You can eat well too. Without the sore muscles.

So Much Anger! Check What You’re Eating!

YOU ARE WHAT OYU EAT

People joke about the punchline…..easy, fast and sweet…..but it really is serious. What you eat feeds your body….or starves it.

Most of the time, when people use that phrase they are trying to push a good diet to LOOK good.  This time, I want you to consider how you FEEL.  Your emotions.  If you are quick to anger, if you have little tolerance for people, look at your diet as part of the cause.

Processed food full of chemicals causes people to be more irritable, quick to anger, and have difficulty listening to information.  I first heard this during the Presidential campaign time period a couple of years ago and thought maybe that is why people are so short tempered when someone says something that differs from what they hold dear.  I had not seen anything more posted, but you know how the press limits what we see.You_are_what_You_Eat__63930

So, seeing the same ugly behavior once again…or should I say, the high level of stupid ugly behavior once again, I thought I would do some online mining. Please remember I am not a scientist, but consider, as a premise, that since our food really started getting pumped full of chemical preservatives and we are ingesting herbicides through high agricultural use, the trend has been increased anger.

People carrying guns…and using them.  People ramming other people with their cars. People suing someone when they smash a car window to rescue a baby or a pet inside a car on a hot day.  People denying their responsibility. People lying.

People claiming God in their life but being so sure theirs is the ONLY right way that it is out of love they have to tell us what fools we are.

So, here are some studies I found.

(NaturalNews) The things you eat have a direct effect on your state of mind, and even have the power to drastically alter your behavioral patterns. These are the findings of a new study out of Oxford University in the U.K., which revealed that processed junk food consumption can lead to aggression, irritability, and even violent tendencies. http://www.naturalnews.com/039655_processed_food_irritability_research.html##ixzz3FP8l1eAo

Food is a basic ingredient in the formation of natural mood elevating brain chemicals like serotonin.  Serotonin deficiencies cause depression, anxiety, anger problems and eating disorders.  Neurons (brain cells) require food nutrients to make the chemical messengers that influence every system of the body.  Your emotions can instantly change depending on what you eat.  If you grab fast food, boxed, packaged, or processed food, you get a stimulating high from sugar, salt and fat.  Unfortunately a crash follows as your brain is starved of serotonin enhancing nutrients.  The crash causes food cravings that can lead to overeating, weight gain and irritability. http://www.manageangerdaily.com/2011/08/heal-your-angry-brain-part-2-of-5/#sthash.BbPuwTOC.dpuf

Food additives and poor diet could help explain poor school performance, criminal behavior, alcoholism, and the growing numbers of Alzheimer‘s patients. According to Dr. Russell Blaylock, high sugar content and starchy carbohydrates lead to excessive insulin release, which in turn leads to falling blood sugar levels, or hypoglycemia. Hypoglycemia causes the brain to secrete glutamate in levels that can cause agitation, depression, anger, anxiety, panic attacks and an increase in suicide risk.  http://articles.mercola.com/sites/articles/archive/2008/07/29/what-s-in-that-how-food-affects-your-behavior.aspx

Aggression is a difficult and sometimes devastating symptom that occurs in children for varied reasons—some known and some unknown — both nature and nurture. It’s a difficult area to study/understand for many reasons, especially for children and adults with autism that cannot speak. Causes and triggers of aggression are difficult for any child to understand and describe (Autism or not). It was this very correlation (food and aggression) that initially intrigued me fourteen year ago, and sparked my career as nutrition researcher and clinician focused on ASD and beyond. http://nourishinghope.com/2014/01/can-aggression-be-related-to-food/

What we eat can not only affect the way we feel physically, it can greatly impact the way we feel and function mentally.  Eating a poor diet, rich in processed food and stimulants, can cause our bodies to swing in blood sugar and hunger, which can create imbalance for both body and mind. Certain additives can create physical discomfort and also cause feelings akin to many anxiety symptoms.  Equally the lack of vital nutrients in our diet can be responsible for exacerbating the symptoms of some pre-existing mental health conditions.   http://www.mentalhealthy.co.uk/lifestyle/mind-food/food-for-good-mental-health.html

There are more. Interesting that much of what is written is coming from the UK.  There is a lot of difficulty here in the US to research the relationship of food to health.  That does not mean the information we can read from overseas studies is not pertinent.  In fact, we can assume our food choices here in the US put us at risk more than in Europe where the concern abotu processed food has resulted in blocking GMOs.

The Right To Know

Two states have tried to pass public referenda on the issue to label food that contains genetically engineered ingredients.  Both California and Washington State failed to pass their attempts at labeling, but the votes are getting closer and closer as fewer residents get confused by the big money thrown at them by the GMO proponents.  This November voters in both Oregon and Colorado will deciding if they want food available in the grocery store to be labeled if any ingredients have been genetically modified.top_ten_genetically_modified_foods

You may be unaware that much of the food you have been eating since the the late 1990s have genetic modifications. Some of those are to permit herbicides and pesticides to be sprayed on what you will eat without harming the food as it grows. There are health issues that have increased since that time and because testing is blocked, there is only circumstantial evidence that these new chemicals in our food are the cause.     The government has run no tests on these foods, saying the companies who produced the modifications to the original food should do it, but testing is not required.  Many countries around the world do not permit foods with genetic modifications to be sold.  GMO lab results

There is a huge group of companies that are fighting the referendum, saying everything is safe. The big players arguing against it are involved in the production of the seeds or the grocery store trade association.  They do not want the referendum in Oregon and Colorado to pass because it would mean they would need to label food with genetically enhanced ingredients and once they identify this, they are afraid of a loss of income.

They have begun to pour millions and millions of dollars into advertising to convince voters it is a bad idea. The main argument is that any change in labeling will cause the price of the food to increase “by hundreds of dollars a year.”  What they don’t say is how often they already change labels.

This is just one example of how a food company changes packaging with no change in pricing.

This is just one example of how a food company changes packaging with no change in pricing.

The side fighting the labeling is pouring millions of dollars into both Oregon and Colorado to try to block the referendum. They are concerned that the consumers’ right to know what they are eating will affect their profits.

No matter how you personally feel about GMOs in your food, labeling should not be a problem for you. The public’s need to know about chemicals in the food has been approved again and again for other items. The food labels just got revised again to make serving sizes easier to read, in the hopes people will stick to them. For health reasons, many people want to avoid this unproven technology.

Breaking the Model

Unless we make an effort, we do what we have seen as kids. It’s one reason I took parenting classes, but that’s another story.  I did not want to be the kind of host my mother patterned. She was so nervous that things would not be perfect enough that life was a bit intolerable in our house the day of a dinner party.

In my prior marriage with Sam’s daddy, his best way to pitch in was to help clean the house and then take the kiddos out for a couple of hours so I could do the food prep without any “Mommy, I need you” kind of distractions. That worked for us.father-and-children

With Graham, we split the tasks nicely.  We clean first, often to music.  The house is straightened and cleaned, altho perhaps not to my mother’s standard. It is clean enough that our guests will not contract any disease or illness eating at our table. Black_and_White_Cartoon_of_a_Maid_Whistling_While_She_Works_clipart_imageHe is a pretty darn good cook, so he tends to do the entree and side while I prepare another side and the dessert. Today I am also preparing the appetizer.

strawberry ice creamThe ham is in the oven. The sides (baked tomatoes and a corn strata) and appetizer (baked brie with smoked blueberry jam I canned) are prepped and ready to pop into the oven at the right time. The dessert (strawberry-rhubarb pie with strawberry ice cream) was prepared yesterday.

It is a truly wonderful thing to break bread with friends. Try it sometime. Pizza works just as well as this home-cooked meal. Do not let your concern over your cooking skills keep you from entertaining your friends at home. It is a lovely gift of friendship.Hospitality-is-not-about....-682x1024
